Slow-Scrambled Eggs Skillet

Ingredients
  • ⅓ cup onion diced
  • ¼ cup cooked bacon pieces
  • 2 tbsp. olive oil or butter
  • 6 large eggs
  • 2 handfuls baby spinach
  • ½ cup cherry tomatoes sliced
  • ½ cup shredded cheese
  • ¾ cup leftover roasted potatoes heated
Method
  1. Sauté onions, bacon and olive oil on medium heat for about 3 minutes.
  2. Meanwhile, whisk eggs in a dish and pour over sauté mixture.
  3. Turn the heat to medium-low.
  4. Using a spatula, stir and fold eggs frequently until eggs start "setting up."
  5. Add spinach.
  6. Continue to cook and stir allowing the spinach to wilt.
  7. Add cheese and tomatoes and fold together until melted.
  8. Eggs are done when there is no liquid in the pan and not soaking wet.
  9. Add potatoes to dish or skillet.
  10. Add eggs on top and serve.
