Red Wine Braised Beef Stew

This beef stew is braised in red wine giving it a depth of flavor and creates a delicious base. Baby potatoes, carrots, baby bella mushrooms, pancetta and onions create a classic yet sophisticated take on this comfort dish. Ingredients
  • 4 oz pancetta diced
  • 2-1/4 lbs organic grass-fed beef chuck cut into 1-1/2 inch pieces
  • 1 tbsp Chicago Joe
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 cup white onion diced
  • 2 cups red wine
  • 4-1/4 cups (33 oz) organic beef broth
  • 2 lbs baby potatoes halved (or quartered depending on size of potato)
  • 1-1/4 lbs organic carrots cut in 2 inch pieces
  • 1 lb baby bella or cremini mushrooms quartered
  • 1 tbsp Herbal Fusion
  • 6 tbsp organic cornstarch
  • 6 tbsp filtered water
Method
  1. On the stovetop place a large Dutch oven over medium heat.
  2. Add pancetta and cook, stirring occasionally for about 7 minutes.
  3. Meanwhile, season the beef with sea salt, pepper and Chicago Joe being sure to coat evenly.
  4. Once pancetta is done cooking, remove with a slotted spoon to a large plate or glass bowl.
  5. Place ½ of the beef back into the dutch oven and sear for 4 min on each side.
  6. Remove seared beef and add with the pancetta.
  7. Cook the last of the beef and add to the remaining beef and pancetta.
  8. Add onion and stir allowing to soften and carmelize for about 4-5 minutes.
  9. Pour in wine being sure to scrape up any bits from the pan. Cook for about 3 minutes to reduce.
  10. Add back the beef and pancetta, along with the broth, carrots, potatoes, mushrooms and Herbal Fusion.
  11. Bring to a boil, then reduce the heat to low and heat to a simmer.
  12. Cook covered until the beef is tender, about 2-1/2 hours.
  13. In a medium bowl, whisk the cornstarch and water until smooth.
  14. Stir into stew and simmer uncovered until thickened, about 5 minutes.
