Savory Meatloaf

This Savory Meatloaf combines simple ingredients which come together in the most spectacular way! The glaze offers a tangy sweetness atop the savory, almost melt-in-your-mouth meatloaf. Create this dish the day before serving and store in the refrigerator until ready to bake. (Be sure to remove at least 1 hour from the fridge and stand at room temperature before baking.)

Ingredients
  • 2 lbs Grass-fed, organic ground beef
  • ¾ cup finely diced white onion
  • 1 tbsp olive oil
  • 1 cup Panko (or gluten-free) bread crumbs
  • 2 eggs
  • 2 tbsp Herbal Fusion
  • 2 tbsp Chicago Joe
  • 2 tsp sea salt
  • 1 tsp black pepper
  • 2 tbsp reduced balsamic vinegar
  • 1 cup shredded cheddar cheese (Or any favorite shredded cheese would work)
  • Glaze
  • 4 tbsp organic ketchup
  • 2 tbsp Dijon mustard
  • 5 tbsp organic brown sugar
  • 2 tbsp reduced balsamic vinegar

Method
  1. Preheat oven to 350 degrees.
  2. In a large bowl, mix (using your hands) all ingredients together until combined.
  3. Pour the glaze on top and spread with a knife making sure to cover the entire top of the loaf.
  4. Bake for 1 hour. (A thermometer should inserted in the center should read at least 150 degrees).
  5. Let rest for about 10-15 minutes. End temperature should reach 160 degrees.
