These mini meatballs are only an inch in diameter, however if you choose, you may form the meat into 1-1/2 inch or even 2 inch meatballs depending on your preference. Mini meatballs are best served in soup, tossed with pasta or skewered with a toothpick and served along marinara sauce or a balsamic reduction for a tasty appetizer.

Ingredients
- 1 tbsp. olive oil
- 1/1/2 cup onion diced
- 1 tbsp. Herbal Fusion
- 1 tsp. sea salt
- 1 tsp. black pepper
- 2.5 pounds ground turkey
- ¼ cup garlic infused olive oil or plain olive oil
- 3 tbsp. garlic powder (Use 4 tbsp if using plain olive oil)
- 3 tbsp. balsamic vinegar
- 1-1/2 tbsp. Herbal Fusion
- 2 tsp. Spicy Barbacoa
- 2 tsp. dried oregano
- 1 tsp. dried sage (rubbed or powder)
- 2 tsp. sea salt
- 2 tsp. black pepper
Method
- In a large saute pan, drizzle the olive oil and set heat to medium. Add onions, Herbal Fusion, sea salt and black pepper.
- Using a wooden spoon, stir and mix the onions allowing them to become some what translucent and softened.
- Remove pan from heat and transfer onions to a plate and allow to cool.
- In a large bowl, add the turkey and all of the ingredients.
- Mix with clean hands. (If the onions are cooled enough to the touch, add them to the bowl as well.)
- Form the meat with your hands and roll into a ball about 1 inch in diameter.
- Saute in a large pan with a small drizzle of olive oil.
- Cook for about 4-5 minutes while moving the meatballs around in the pan being sure to brown the entire meatball. When no pink is present inside the meatball when cut open, meatball is done.
- *At this point you can add to your favorite sauce and let simmer, or skewer with a toothpick serving with a side of your favorite sauce.
- *If adding to soup, place raw meatballs in liquid and cook with all other ingredients. This works especially well in the slow-cooker.
Makes about 36 mini 1-inch meatballs
